Spicy Peanut Chicken
Sheet pan recipes have been our go-to lately for dinners. All you do is throw your meal ingredients together, bake, and it's ready before you know it!
This recipe is great when you need to whip together a meal, but don't have much time.
Recipe
Ingredients
Sauce:
1/2 c soy sauce
1/4 c hoisin sauce
3 T Mustache on Fire brine
1 T sesame oil
1 t minced ginger
4 minced garlic cloves
2 T cornstarch
1/2 c water
Chicken & Veggies:
2 pounds chicken breasts (cut into small 1 inch cubes)
1 head broccoli, chopped
1 red bell pepper cut int chunks
1/2 pound green beans
1 c roasted peanuts
1. Preheat over to 400F. In a saucepan, combine all sauce ingredients and whisk together.
2. Simmer until thickens, whisking regularly. Once thickened, remove from heat and set aside.
3. Line a sheet pan with parchment paper, add chicken and 1/3 of the sauce. Toss chicken till coated. Cook for 8 minutes in the oven.
4. Remove from oven, and add veggies onto the sheet pan. Pour the remaining sauce on the chicken and veggies and coat well. Sprinkle in the peanuts.
5. Cook for another 8-12 minutes, or until chicken is cooked thoroughly.
6. Can be served with rice or grain of choice.
