Reuben Mac & Cheese

With St. Patrick's Day around the corner and corned beef everywhere, we decided to make a twist on a classic favorite. We present to you Reuben Mac & Cheese.

This recipe is super easy and fast, while being extremely delicious. You're definitely going to have a hard time not eating the whole recipe yourself! ;)

Recipe

Ingredients
1 pound cavatappi pasta (or any other short pasta)
4 slices rye bread, toasted
3 T butter
fresh parsley to taste
3 T all-purpose flour
2 C milk
2 c shredded swiss cheese
2 c shredded cheddar cheese
3/4 corned beef, chopped
1 pound sauerkraut
3/4 c chopped Deli Style Dill pickles

Directions
Bring water to a boil, and add pasta. Add salt to the water and cook until noodles are done. While the pasta is boiling, take the toasted rye bread, salt, pepper, and parsley and lightly blend in a food processor to make into bread crumbs. Set aside.
In a sauce pan, melt butter. Once the butter is melted, whisk in flour. Once thoroughly combined, add in the milk. Add salt and pepper and let thicken for about 5 minutes. Add in the swiss cheese. Drain pasta and add in the pickles, corned beef, and sauerkraut. Next, add in the cheese sauce.
Transfer mac and cheese to a casserole dish, top with remaining cheese and bread crumbs. Brown under the broiler for about 4-5 minutes.
