Lemon Dill Chicken

Ever wonder what to do with all that leftover brine in your pickle jar? Look no further, cause we have a dill-icious recipe for you! We took our Spicy Dill brine and put it into a Lemon Dill Chicken recipe. We promise, you won't be disappointed with this one.


-1 pound chicken breasts, cut into small one in cubes
-3 T olive oil
-2 T spicy dill brine
-1/4 c lemon juice
-4 minced garlic cloves
-2 tsp oregano
-salt and pepper to taste
-1 pound red potatoes, quartered
-1 red onion, sliced into wedges
-1 red pepper, chopped
-1 green pepper, chopped
-any other veggies of your choice!

-2 lemons cut in half
-feta cheese
-kalamata olives


Preheat oven to 425F. Mix together ingredients for marinade and pour over chicken (you can let the marinade sit overnight on the chicken, or just place on the chicken and bake). Place veggies and chicken on sheet pan and arrange evenly. Place lemons throughout the pan. Bake for about 35-40 minutes, until veggies are cooked and chicken reaches 165 degrees. Serve in bowls and top with olives and feta!
