Low-Carb Faux-tato Salad

Low carb lovers, we got your back! Today we are taking classic potato salad & swapping out the potatoes for cauliflower to make an exciting new twist. 

If you're ever struggling to get those veggies in, this recipe will save you!

Recipe:

Ingredients
1 head of cauliflower, chopped
2 stalks celery, chopped
Chopped radishes and carrots, optional
1/4 c chopped Randy's Pickles of Choice
2 T chopped green onions
4 hard boiled eggs, chopped
1/2 c Mayo (can add more if needed)
1 T Mustard (or more to taste)
Salt & Pepper to taste

Instructions
In a large bowl, mix all of the vegetables and the hard boiled eggs. In a separate bowl, mix mayo, mustard, salt, pepper, and pickles until well combined. Once the mayo mixture is complete, mix it into the vegetables. If the mayo mixture does not thoroughly cover veggies, feel free to add in extra mayo/mustard. Enjoy!
